Probally be like hey, we already have 8 cores on X79, but now we will sell them with a new chipset, and call them k models you can overclock it.

I don't think intel is going to change, even more now that the X299 chips are also with paste. Although personally i would pay extra $50 if they were to return to solder, or even release a version lets say KS that cost extra $50 for a solder, im already paying deliders that. What i do find interesting is the push of AMD, with the 2700X, i feel intel will release the 8 core, then i hope the rumors are right and we see 2800X being a 10 core for X470... forcing intel in next chipset iteration to give us a 10/12 core.

2800X being 10 core is hard to see as AMD is using 4C/8T CCXes. That would mean AMD would also have available 12C/24T chips on X470 by design.
You dont think they could have done a 12 core and disable 2 cores just to release the 10 core after intel releases their 8 core, and still have 12 core in hand for when intel reacts?

I don't care if it has 172 cores - I don't do any video editing. I do game though so I'd be much more excited about a processor with either a higher frequency for speed, more PCIe lanes as I have a lot of cards and not enough lanes or even a 7nm fabrication as I leave my PC on all the time and at least it would use less power - hell they could just say they are going to use better thermal paste and that would be more exciting to me than more cores. Frankly this processor doesn't do much for most people unless they do video editing or zip a lot of really big files.
