I actually posted something about this a long time ago, should be in my post history.
There's no "framerate" because your cones and rods are continuously sending pulses to your brain, and the pulses are on a per cone, per rod basis. So every cone and rod would have to have it's own framerate measured.
And there's no real "resolution" only cone density. Which varies depending location within the eye. The center back being the densest.
But it is neat to have a general idea of eye resolution.
Just wish it wasn't the vsauce guy. I don't mind Vsauce 2 and vsauce 3, but this guy gets annoying after a while.

You know it's real science when the first 4 mins are telling you the proceeding 4 mins will be totally wrong XD

It's rather complicated to compare the retina's spatial resolution to a CCD/CMOS censor. The photosensitive cells in the eye are placed in a random order with variable density over a curved surface, while the digital censor is a flat piece of silicon with strictly ordered photo-elements.
This one of the reasons why we perceive pixel aliasing in digital images as artificial and unrealistic.
